Healthy Pumpkin Bread That Stays Moist for Days

Every October there’s a can of pumpkin open on my counter and a loaf pan waiting to be used. This healthy pumpkin bread is the reason. It’s soft, properly spiced, and sweetened with maple syrup instead of white sugar, so a slice with your morning coffee doesn’t feel like dessert sneaking into breakfast.

It’s a one-bowl recipe. You don’t need a mixer, and you don’t need to wait around for butter to soften. The batter takes about ten minutes, and the whole kitchen smells like fall while it bakes.

Why This Healthy Pumpkin Bread Works

Pumpkin bread has a reputation for coming out either dry or so dense it could hold a door open. This version aims for the middle.

White whole wheat flour gives you fiber without the heavy, grainy texture of regular whole wheat. Unsweetened applesauce and a little olive oil keep the crumb moist for days. Maple syrup adds sweetness and a mellow, caramel-like flavor that sits nicely next to cinnamon and nutmeg.

What Goes Into It

Most of this is pantry stuff, but a few notes will help it turn out right.

Use pumpkin puree, not pumpkin pie filling. The filling already has sugar and spices in it, and it will throw off the balance. If you’re roasting your own pumpkin, blot the puree with a paper towel first. Extra water makes the loaf gummy.

Regular whole wheat flour works if that’s what you have, though the slices will be a little denser. Olive oil and melted coconut oil are both fine, and any milk will do, dairy or plant-based.

Tips for a Soft, Tall Loaf

Stir the batter just until the flour disappears. Overmixing is the fastest route to a tough loaf. Spoon your flour into the measuring cup and level it off instead of scooping straight from the bag, since packed flour dries everything out.

Start checking at 50 minutes. A toothpick should come out with a few moist crumbs, not wet batter. If the top browns too quickly, lay a piece of foil over it for the last stretch.

Then let the bread cool in the pan for 15 minutes before lifting it out. I know the waiting is hard. Slicing a hot loaf is how you end up with crumbs instead of slices.

Easy Variations

Fold in half a cup of chocolate chips or chopped walnuts if you want a little crunch or a treat. A handful of pepitas on top looks pretty and adds some bite. You can also bake the batter as 12 muffins for about 20 minutes, which works well for lunchboxes.

How to Store It

Keep slices in an airtight container on the counter for two days, or in the fridge for up to five. For longer storage, slice the loaf, wrap the pieces, and freeze them for up to three months. A frozen slice goes straight into the toaster and tastes freshly baked.

Ingredients

  • 1 3/4 Cups White whole wheat flour about 210 g
  • 1 Teaspoon Baking soda
  • 1/2 Teaspoon Baking powder
  • 1/2 Teaspoon Salt
  • 2 Teaspoons Ground Cinnamon
  • 1/2 Teaspoon Ground nutmeg
  • 1/4 Teaspoon Ground ginger
  • 1 Cup Pumpkin puree not pie filling
  • 1/2 Cup pure maple syrup
  • 1/4 Cup unsweetened applesauce
  • 1/4 Cup olive oil or melted coconut oil
  • 2 Large Eggs
  • 1/4 Cup milk of choice
  • 1 Teaspoon Vanilla extract
  • 2 Tablespoons Pepitas for topping (optional)

Method

  1. Heat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line it with parchment paper, leaving a little overhang on the long sides so you can lift the loaf out later.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In a second bowl, whisk the pumpkin puree, maple syrup, applesauce, oil, eggs, milk, and vanilla until smooth.
  4. Pour the wet mixture into the dry mixture. Fold with a spatula just until no dry streaks remain. A few small lumps are fine.
  5. Scrape the batter into the prepared pan and smooth the top. Sprinkle with pepitas if using.
  6. Bake for 50 to 55 minutes, until a toothpick in the center comes out with a few moist crumbs. If the top browns too fast, cover loosely with foil after about 35 minutes.
  7. Cool in the pan for 15 minutes, then lift the loaf out and let it cool on a wire rack for at least 30 minutes before slicing.

Notes

  • Use plain pumpkin puree. Pumpkin pie filling has added sugar and spices and will change the result.
  • Fresh pumpkin puree should be blotted with a paper towel to remove extra water.
  • Regular whole wheat flour works too, but the loaf will be slightly denser.
  • For muffins, fill 12 lined cups and bake for 18 to 20 minutes.
  • Add 1/2 cup chocolate chips or chopped walnuts to the batter if you like.
  • Storage: counter for 2 days, fridge for up to 5 days, freezer for up to 3 months (slice first).
  • Honey can replace the maple syrup one to one. Watch the top, as it browns faster.

Healthy Pumpkin Bread FAQs

Can I use fresh pumpkin instead of canned?

Yes. Roast it until soft, puree it, and blot out the extra moisture before you measure.

Can I make this gluten-free?

Use a cup-for-cup gluten-free flour blend. The slices will be a bit more delicate, so let the loaf cool completely before cutting.

Can I swap the maple syrup for honey?

Yes, one to one. Honey browns faster, so keep an eye on the top.

Why did my pumpkin bread sink in the middle?

Usually it needed more time in the oven, or the oven door was opened too early. Also check that your baking soda is fresh.

Is this bread dairy-free?

It is when you use plant-based milk and oil. There’s no butter in it.

If you bake it, leave a rating and tell me how it turned out in the comments. I read every one.
